A Culinary Journey through Colombia

We have put together a small selection of typical local dishes. Colombia offers a variety of traditional cuisine, but here are five typical main dishes you might consider for your next trip to Colombia.

These dishes are just a small selection from the rich Colombian cuisine. There are many more delicious dishes to discover, depending on the region and culinary diversity of the country. Although the selection has been quite meat and fish-focused, Colombia also has an increasing number of vegetarian and vegan restaurants.

Ajiaco soup

1.   Bandeja Paisa: Bandeja Paisa is a rich and hearty dish from the Antioquia region. It consists of fried beef, chorizo sausage, crispy pork belly, rice, beans, avocado, fried egg, arepa (corn-based flatbread), and patacones (fried plantains).

2.   Lomo al Trapo: Lomo al Trapo is a traditional dish from the Valle del Cauca region. It involves a juicy piece of beef wrapped in a cloth and grilled. It is often served with papas chorreadas (potatoes with cheese sauce) and salad.

3.   Ajiaco: Ajiaco is a traditional soup popular in the capital city, Bogotá. It is made with chicken, potatoes, corn, watercress, and guascas (a native herb). It is usually served with rice, avocado, and cream.

4.   Lechona: Lechona is a traditional dish originating from the central region of Tolima and is prepared for special occasions and celebrations in Colombia. It consists of a whole pig stuffed with rice, peas, onions, spices, and sometimes meat. The pig is slowly roasted in the oven until it has a crispy skin.

5.   Cazuela de Mariscos: This is a seafood stew that is very popular along the Colombian coast. It includes various seafood such as shrimp, mussels, squid, and fish, cooked with tomatoes, onions, garlic, herbs, and spices. It is usually served with rice.
